Well, we’re here to bring you some recipes that we *hope* will get you psyched to “eat your vegetables” today and every day after that!

Let’s start with an easy – but classic – recipe for summer and a general favorite among most veggie-consuming humans out there; grilled veggies. Yes, you heard us – fire up the grill and throw in some veggies among the hamburgers and hot dogs. It’s the perfect way to add a little color to your summer cookout. From tasty veggie-kabobs to seasoned and roasted veggies, these recipes are the perfect complement to any cookout this summer.

Avocados are having a moment. Well, a lot of moments, actually. Whether it’s guacamole, toast, or straight up spooning it up with a little salt – we love avocado (but that’s a whole other blog post for a different day). Today, we’ll focus on just the toast. Full of vitamins and good fats, the creamy goodness blends perfectly with just about any flavor you may want to mix it up with. Just want to keep it basic? Spread that green stuff on a toasted pita bread, or grab some fresh Italian bread if you want to get a little fancy. Any way you make it, you can’t really go wrong. Pizza…With a Twist

Last but not least, a twist on everyone’s favorite meal: pizza! Since it’s summer, we’re throwing pesto on basically everything we’re eating and our homemade pizza is no exception. Plus, the veggie options out there that go WITH pesto are endless, which makes adding toppings a breeze! We’re throwing our pizzas on the grill for easy summertime cooking, but they cook up just as well in the oven. Our top picks for veggie toppings include kale, red peppers, mushrooms, and onions…but we’re not limiting ourselves.
